Preheat oven to 350 degrees.
In a large bowl or stand mixer combine the butter and sugars. Beat until light and fluffy (about 2 minutes).
Add egg and mix until well combined.
In a separate bowl combine the flour, baking soda and salt.
Slowly add this to the creamed mixture. Do NOT overmix.
Mix in chocolate chips. Just until combined.
Then form the cookies into balls. *My favorite cookie scoop is linked below. Flatten slightly with the palm of your hand and bake on a cookie sheet for 10-12 minutes until lightly browned.
Let cookies cool on cookie sheet for 5 minutes. Transfer to cooling rack until still slightly warm then transfer to airtight container or freezer bag and freeze. Hopefully you have already enjoyed a cookie by now but if you haven't; make sure to have one warm from the oven with a glass of milk. So good!
