Simple Sourdough Discard Apple Crisp Recipe

Cool fall temperatures, cozy nights, blue skies, pretty leaves, and a delicious bite of warm sourdough apple crisp with a scoop of vanilla ice cream. The perfect fall treat combination to use up bubbly sourdough starter or sourdough discard.

Ingredients

  • 6 large apples Honeycrisp (about 7 cups)
  • ¾ cup (100g) granulated sugar*
  • 2 T (15g) all-purpose flour
  • 1 tsp (3-4g) ground cinnamon
  • 1/3 cup (80g) water

Oat Crumble Topping Ingredients:

  • 1 ½ cup (135g) old fashioned oats
  • ½ cup (60g) all-purpose flour
  • ½ cup (120g) sourdough starter, discard or active
  • ¾ cup (165g) brown sugar, packed
  • 1 tsp (4g) baking soda
  • 1 tsp (3-4g) cinnamon
  • ½ cup (120g) butter, melted

Instructions

Instructions to Make this Simple Sourdough Discard Apple Crisp:

  • Preheat your oven to 325 degrees.
  • Peel, core, and slice your apples and place in a 9”x13” baking dish.

  • In a small bowl, mix together the granulated sugar, 2T flour, and cinnamon. After you have mixed this together, pour over the prepared apples in the baking dish.

  • Next, take the water and pour over the top of the apples and sugar mixture.
  • In a medium bowl, add the oatmeal, brown sugar, baking soda and cinnamon. Mix to combine. Then in a separate small bowl combine the melted butter and sourdough starter (or substitute flour for the sourdough starter and add it to the bowl with the oatmeal). Mix well and then add to the bowl with the dry ingredients.

  • Once well combined, spread the oatmeal topping over the apples in an even layer.

  • Place in preheated oven and bake for 60-80 minutes until you have tender apples (crisp apples will take longer to bake), the juices are bubbling, and the top is nicely golden brown.

  • Remove from the oven. Serve with ice cream or whipped cream.

  • Store leftovers at room temperature 2-3 days in an airtight container or covered with plastic wrap.

Notes

*I recommend adjusting this amount by a ¼ cup (50g) depending on the sweetness of your apples. If you have really tart apples, you will want to increase this sugar amount.
Serving Suggestion: If you want to take this apple crisp to the next level make a homemade caramel sauce to drizzle over the top of the crisp with ice cream. A fun way to make this dessert extra special.
