Underrated? Yes! Even by me. I love apple crisp but when I think to make it, my expectations are always low. Then, I actually make this Simple Sourdough Discard Apple Crisp and think, wow, this is really good! Maybe it’s because it’s such an easy dessert to put together that I think for some reason it might not be THAT good…but it is. So, make sure to add this to your fall baking line up. You will be so glad you did!

Sweet apples…warm spices…. a crunchy, buttery oat crumble topping with a unique twist of sourdough, all paired with a gooey apple filling. Top this with a scoop of ice cream and it is perfect! This easy sourdough apple dessert is sure to be a crowd pleaser this fall. Even better if you have extra sourdough discard to use!

Ingredients for Simple Sourdough Discard Apple Crisp Recipe:

  • Fresh Apples: I think the best apples to use are the Honeycrisp apples, but you can use any fresh apple that you like baking with. Granny Smith apples are another good option.
  • Granulated Sugar: Added sweetness. If you have tart apples, you may want to increase the white sugar by a ¼- ½ cup.
  • All-purpose Flour: To help make a nice thick apple sauce around the apples.
  • Cinnamon: The perfect spice for apple desserts. Cinnamon brings a warmth and delicious flavor to apple crisp.
  • Water: To help create a juicy sauce for the apple crisp.
  • Old Fashioned Rolled Oats: I like using old-fashioned oats in this recipe, but quick oats will work as well if that is what you have on hand.
  • Sourdough Starter: You can use either active sourdough starter or sourdough discard in this recipe. Both work great! I love the versatility of using either one when baking with sourdough in recipes like this.
  • Brown Sugar: I love using brown sugar in the topping. Using brown sugar makes for a richer more flavorful apple crisp.
  • Baking Soda: Adds texture to the topping when baked.
  • Butter: Flavor and binder in the apple crisp topping. You will use melted butter which is so easy to incorporate into the oat crumble topping.

Simple Sourdough Discard Apple Crisp Recipe

  • 6 large apples, Honeycrisp (about 7 cups)
  • ¾ cup (100g) granulated sugar*
  • 2 T (15g) all-purpose flour
  • 1 tsp (3-4g) ground cinnamon
  • 1/3 cup (80g) water

Oat Crumble Topping Ingredients:

  • 1 ½ cup (135g) old fashioned oats
  • ½ cup (60g) all-purpose flour
  • ½ cup (120g) sourdough starter, discard or active
  • ¾ cup (165g) brown sugar, packed
  • 1 tsp (4g) baking soda
  • 1 tsp (3-4g) cinnamon
  • ½ cup (120g) butter, melted

Instructions to Make this Simple Sourdough Discard Apple Crisp:

  • Preheat your oven to 325 degrees.
  • Peel, core, and slice your apples and place in a 9”x13” baking dish.
  • In a small bowl, mix together the granulated sugar, 2T flour, and cinnamon. After you have mixed this together, pour over the prepared apples in the baking dish.
  • Next, take the water and pour over the top of the apples and sugar mixture.
  • In a medium bowl, add the oatmeal, brown sugar, baking soda and cinnamon. Mix to combine. Then in a separate small bowl combine the melted butter and sourdough starter (or substitute flour for the sourdough starter and add it to the bowl with the oatmeal). Mix well and then add to the bowl with the dry ingredients.
  • Once well combined, spread the oatmeal topping over the apples in an even layer.
  • Place in preheated oven and bake for 60-80 minutes until you have tender apples (crisp apples will take longer to bake), the juices are bubbling, and the top is nicely golden brown.
  • Remove from the oven. Serve with ice cream or whipped cream.
  • Store leftovers at room temperature 2-3 days in an airtight container or covered with plastic wrap.

  • *I recommend adjusting this amount by a ¼ cup (50g) depending on the sweetness of your apples. If you have really tart apples, you will want to increase this sugar amount.
  • Serving Suggestions:
    • If you want to take this apple crisp to the next level make a homemade caramel sauce to drizzle over the top of the crisp with ice cream. A fun way to make this dessert extra special.
    • You can also add a 1/2 cup of chopped pecans to the topping before you bake it for an extra element and crunch.
