Simple Sourdough Discard Fudgy Brownie Recipe

Do you need a recipe that is simple and chocolate-y? These sourdough discard fudgy brownies can fix your chocolate cravings and fast. Rich chocolate flavor, moist with optional chocolate chips throughout. Serve them warm with a glass of milk. If you have a sourdough starter then you probably have excess sourdough starter to use and this, Simple Sourdough Discard Fudgy Brownie Recipe, is the perfect way to use it!
Another thing to love about this decadent dessert is that they can be made with two bowls and no stovetop or melted chocolate! This sourdough brownie recipe is a spin-off of my in-law’s favorite brownie recipe. I love how simple and delicious they are! Okay! Let’s make some sourdough brownies!

Ingredients for Simple Sourdough Discard Fudgy Brownie Recipe
- All Purpose Flour- I use Dakota Maid, but any quality unbleached flour should work well.
- Baking Cocoa- Part of what makes these brownies so simple is the chocolate flavor that comes from cocoa powder.
- Granulated Sugar (white sugar)- Both brown sugar and granulated sugar are used in this delicious brownie.
- Brown Sugar- I added brown sugar to add to the fudginess of these sourdough discard brownies.
- Baking Powder– The main leavening agent along with the large eggs.
- Salt- Added to provide a balance of flavor.
- Oil- You can use any neutral cooking oil for this recipe. I use canola oil.
- Eggs- A little heavy on eggs but don’t skip any! This will make your brownies SO good!
- Vanilla– Pure vanilla extract brings more flavor to these sourdough brownies.
- Sourdough Starter Discard or Active Sourdough Starter– You can use both for this recipe. Easily use active or sourdough discard to make these delicious chocolate brownies.

- Chocolate Chips (Optional)- I personally like them both ways but if you want them to be extra chocolatey and rich be sure to add the chocolate chips. We prefer a good quality chocolate chip. Semi-sweet or milk chocolate would work well. You could use chocolate chunks as well!

How to Long Ferment these Sourdough Brownies:
If you want to long ferment these sourdough brownies or want a more pronounced sourdough flavor, follow these steps.
- Follow the directions as usual while omitting the baking powder, salt, eggs, chocolate chips and oil.
- Ferment the combined ingredients overnight.
- The next day combine the omitted ingredients together AND THEN add them to the fermented ingredients. Fold in the chocolate chips.
- Follow the recipe instructions to finish baking the brownies.

How to make this a pantry staple:
No need to make brownies from a box mix when you can make this pantry staple as a homemade brownie mix.
Are you used to making your brownies from the box? Did you know that you can simplify your process of making homemade brownies by combining the dry ingredients together and storing them for when you are ready to make a pan of homemade brownies?
- Take the dry ingredients and chocolate chips and combine. Place in a mason jar with an airtight lid.
- When you are ready to make some brownies simply take the dry ingredients and place them in a bowl. Then mix up the wet ingredients and add them to the dry. Then follow the rest of the directions as written in the recipe.
- The dry mix should be fine stored in a cool dark place for 3 months.
If you want to be even more prepared you could write out the instructions on a card and laminate, it. Then you can just have that handy when you are ready to make brownies.

Simple Sourdough Discard Fudgy Brownie Recipe
- 1 cup (145g) all-purpose flour
- 1 cup (90g) baking cocoa
- 1 cup (200g) granulated sugar
- ¾ cup (150g) brown sugar
- 1 tsp (3g) baking powder
- ½ tsp (3g) salt
- 2/3 cup (135g) cooking oil
- 4 large eggs, room temperature
- 2 tsp (6g) pure vanilla extract
- ½ cup (120g) sourdough starter discard or active
- 1 cup semi-sweet chocolate chips (optional)
Instructions:
- Preheat the oven to 350 degrees.
- In a large mixing bowl combine the dry ingredients, the flour, cocoa, sugars, baking powder and salt. Set the dry ingredients aside.
- In a medium bowl combine the wet ingredients, the cooking oil, eggs, vanilla, and starter. Mix this with a Danish dough hook or whisk until well incorporated.
- Next, add the wet ingredients to the dry ingredients that are in the large bowl and mix until just combined. Don’t overmix!
- With a rubber spatula fold in the chocolate chips if desired.
- Grease a 9”x13” pan, we prefer using a Nordic aluminum pan for best results, but you can use a glass pan as well. If using glass, make sure to lessen the oven temperature to 325 degrees and increase the bake time by 5-10 minutes as they will bake up slower in a glass dish.
- Spread out the brownie batter into the prepared pan. It will be thick in consistency.
- Place the pan in the preheated oven and bake for 24-28 minutes.
- Remove to a wire rack and let cool for 20 minutes before cutting into the brownies! Enjoy!!
Notes about baking:
You don’t want to overbake (or underbake for that matter) your brownies. It is best to watch them the last few minutes of baking to ensure they are well baked. Here are a couple of things to look for:
- Shiny and baked looking on top.
- When you touch the center, they seem set.
- The edges have come away from the pan some.
Storing:
Once cooled you can store in an airtight container for around 5 days or freeze them for a snack here and there or an option to serve others or bring to a potluck in a pinch.
