This Sourdough Cinnamon Streusel Dessert Pizza Recipe combines a slightly sweet sourdough pizza crust with a cinnamon sugar glaze, streusel and a sweet drizzle. It is excellent as a dessert or even as a sweet breakfast treat with a cup of coffee. This is a super simple recipe to use your sourdough starter for, and you will be making it again and again.

Sourdough Cinnamon Streusel Dessert Pizza Ingredients

Sourdough Dessert Pizza Dough Ingredients:

  • Sourdough Starter: You want an active and bubbly sourdough starter that is at peak.
  • Whole Milk: Used as the hydration in this recipe and it also adds to the enriched dough factor.
  • Granulated Sugar: This gives your starter some help, and it also brings a nice sweetness to the crust.
  • Bread Flour: I like using bread flour for this sourdough dessert pizza crust.
  • Butter: Soft butter is the best and incorporates better.
  • Sea Salt: To balance flavors.

Butter Sugar Glaze Ingredients:

  • Melted Butter: Brings the flavors to life and makes it a glaze.
  • Granulated Sugar: For sweetness!
  • Cinnamon: For flavor and it also smells incredible when baking it up.

Streusel Ingredients:

  • Butter: You want your butter to be cold for the streusel.
  • All-purpose Flour: To get the right texture for the streusel.
  • Brown Sugar: Sweetness and crunch.
  • Cinnamon: Flavor.

Drizzle Ingredients:

  • Powdered Sugar: Sweetness to the top.
  • Heavy Whipping Cream: To make a lovely drizzle.

Pizza Crust:

  • 85g active sourdough starter
  • 105g whole milk
  • 20g granulated sugar
  • 2 T (30g) butter, softened
  • 200g bread flour
  • 5g sea salt

Sweet Topping Glaze Ingredients:

  • 2 T (30g) butter, melted
  • ¼ tsp. cinnamon
  • 1 T (12g) granulated sugar

Streusel Topping Ingredients:

  • 3T (45g) cold butter, cubed
  • ½ cup (63g) all-purpose flour
  • 2 T (25g) brown sugar
  • ¼ tsp cinnamon

Drizzle Ingredients:

  • 3T (25g) powdered sugar
  • 1 – 1 ½ T (25g) heavy whipping cream
  • ¼ tsp vanilla bean paste or pure vanilla extract (optional)

Instructions for the sourdough dessert pizza crust:

  • In a large bowl or the bowl of a stand mixer fitted with the dough hook, combine the sourdough starter, whole milk and sugar. Mix to form a slurry.
  • Then to this mixture, add the flour and butter and mix until combined. Let the dough rest at this point for 15 minutes. After 15 minutes add the sea salt and knead for 7 minutes on low speed.
  • When the dough has been kneaded, place in the fridge at least 8-10 hours or for up to 5 days.
  • When you are ready to make the dessert pizza, take the dough from the fridge. Pat the dough into a 10–12-inch circle on parchment paper. Try to evenly spread the crust and if it is stiff let rest for 10 minutes and then finish shaping the pizza. This gives the gluten a chance to relax and makes it easier to work with.
  • Next, rest covered for 6-8 hours or until risen and slightly puffy.
  • After it has risen, preheat your oven to 425 degrees.

Making the Glaze and adding to the crust:

  • For the glaze melt the butter and add the sugar and cinnamon and mix. Next, pour the cinnamon mixture/glaze on the crust and spread to the edges, leaving about a half inch from the edges.

Instructions for the Streusel and adding it to the crust:

  • Next, in a small bowl add the cold butter that has been cubed, flour, brown sugar and cinnamon and with a fork cut the butter into the flour until it resembles crumbs. It’s okay if there are a few bigger chunks.
  • Take this and spread evenly over the butter glaze.
  • Once the oven is preheated transfer with a baking sheet to the oven and either bake on the baking sheet or transfer to a baking steel or baking stone to bake.
  • Bake for 10-14 minutes at 425 degrees or until golden brown.
  • Remove from the oven and cool for 15-20 minutes.
  • While the pizza is cooling take and mix icing ingredients in a small bowl with a whisk until smooth. Place in a plastic bag and snip just a small part of the corner of the bag to drizzle the icing easily.
  • When the pizza has cooled some, drizzle the icing over the cinnamon sugar dessert pizza and cut into slices and serve!

This makes enough dough for 1 sourdough dessert pizza (12”).

  • 2 T (20g) granulated sugar
  • 2 T (30g) butter, softened
  • 1½-1⅔ cups (200g) bread flour
  • 1 tsp (5g) sea salt

Sweet Topping Glaze Ingredients:

  • 2 T (30g) butter, melted
  • ¼ tsp. cinnamon
  • 1 T (12g) granulated sugar
