This Simple Sourdough Fruit Pizza: A Recipe from the Farm is easy to make, so good, and the perfect summer dessert. The sourdough sugar cookie crust, (like a sweet pizza crust) whipped cream cheese layer, and fresh fruit all come together to make a beautiful and delicious dessert!

If you are looking for a fun patriotic dessert to celebrate Independence Day (or Memorial Day), then this is definitely it! Blueberries, strawberries and blackberries lined up with a white stripe from the frosting will make a simple yet beautiful dessert to share with your family and friends. Let’s get right to the ingredients you need for this fruit pizza recipe!

Ingredients for Simple Sourdough Fruit Pizza

Unsalted Butter

The first thing you’ll need for this recipe is butter. You’ll want it to be softened before mixing the sourdough crust up. If you don’t have unsalted you can use salted butter just cut back the salt in the recipe if you do.

Granulated Sugar

I love how the measurements are so straight forward and easy in this recipe. Sugar is added, you got it, for sweetness!

Eggs

A couple eggs. Make sure they are at room temperature, so they incorporate well into the dough.

Pure Vanilla Extract

Vanilla extract adds such a nice flavor to this cookie base.

Sourdough Starter Discard

This recipe you can use sourdough discard or active sourdough starter. Cold or room temperature is fine!

Do you need a sourdough starter?

All Purpose Flour

You will need 2 cups of all-purpose flour for this recipe.

Cornstarch

This adds a nice chew to your cookie base! Cornstarch is added all for the texture!

Salt

Remember to cut back on the salt if you use salted butter!

Baking Powder

Along with the eggs, baking powder is added to help with leavening the cookie dough base.

The cream cheese layer:

Cream cheese, powdered sugar, cream and vanilla extract make the best frosting/icing layer! You whip the ingredients together until the cream thickens and it is smooth. It’s delicious!

Fruit Topping Ideas:

You really can use so many different fruits and combinations. Make sure to choose some of your favorite fruits and be creative as you decorate the top!

  • Kiwi
  • Cherries
  • Pineapple
  • Peaches
  • Pomegranate
  • Orange Zest
  • Bananas

Other Decoration Ideas:

You can really decorate the top of the sourdough fruit pizza in so many different ways. Some of my favorites and some ideas I haven’t tried yet are listed below.

  • An American Flag Design – A fun way to decorate the pizza for 4th of July or Memorial Day.
  • Alternating the fruit options you chose, covering the whole top
  • Outline a name, year or letter for a special occasion like a graduation year.
  • There is also the option to spread this sweet sugar cookie dough onto to pizza pans to make circle sourdough fruit pizzas. Be sure to grease the pizza pan well!

Long Ferment Option:

You can use active sourdough starter and do a long ferment in the fridge overnight if you would like. To do this combine the wet ingredients and flour, place covered in the fridge overnight.

Then the next day take the fruit pizza crust dough out of the fridge and let sit at room temperature for 30-45 minutes then continue with the recipe as written below.

Fermenting with sourdough is known to have health benefits such as the potential for easier digestion.

Simple Sourdough Fruit Pizza: A Recipe from the Farm

Dough Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • ½ cup sourdough starter discard or active
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 T cornstarch
  • ½ tsp salt
  • 1 tsp baking powder

Whipped Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • ¾ cup powdered sugar
  • ¾ cup heavy whipping cream
  • 2 tsp pure vanilla extract
  • Topping: Assorted Fruit

Instructions for the sheet pan cookie:

  • Preheat the oven to 350-degrees.
  • First in a large bowl or a bowl of a stand mixer fitted with a paddle attachment, beat the butter for 2-3 minutes on medium speed until light and fluffy. Next, add the sugar and beat for another 2 minutes on medium speed.
  • After you have done that add the eggs and vanilla extract and beat once again for about 2-3 minutes. You want the batter to be light and fluffy. Then stop the mixer and add the sourdough starter discard. Beat this until combined, about 1 minute.
  • In a separate medium bowl combine the flour, cornstarch, salt and baking powder.
  • With the mixer on low, slowly add the dry ingredients to the wet and mix until just combined.
  • Remove the bowl from the mixer and give the batter a final stir with a rubber spatula to make sure it is all combined well.
  • Grease a half sheet cookie sheet (17″ x 12″) and spread the batter out evenly. The batter may be a little sticky. If you are having trouble getting it to spread with a spatula you can use a lightly floured hand to work it out evenly in the baking sheet.
  • Place the pan in the preheated 350-degree oven and bake for 19-22 minutes or until lightly golden brown on the edges.
  • Remove from the oven and cool before assembling the pizza.

Whipped Cream Cheese Layer:

  • In the bowl of a stand mixer, using the whisk attachment, add in the cream cheese, powdered sugar and vanilla extract. Beat until well combined, starting at a low speed until the powdered sugar is combined. Add in the cream and beat on high for 2-3 minutes until it becomes thick and smooth.
  • Wash fruit and prepare as desired for the assembly of the fruit pizza.

Assembly of the Sourdough Fruit Pizza:

  • After the sugar cookie crust has cooled take the prepared frosting layer and spread an even layer on top of the crust.
  • Then, working with the prepared fruit decorate the top of the pizza how you would like.
  • I like to do lines of red, white and blue for Independence Day but if it isn’t for a holiday, you can arrange it however you would like. Be creative!
  • Serve the same day and enjoy!

Making the fruit pizza ahead of time:

If you do want to you can make the crust and layer the cream layer on top and refrigerate, covered with plastic wrap (Stick toothpicks in the pizza cookie crust/frosting to help keep the plastic wrap from sticking to the frosting layer.) or a bar pan lid for up to 3 days this way. Then before you are ready to serve the pizza simply place fruit on top and serve!
