Egg Hash for Breakfast Burritos: A Recipe from the Farm

Rise ‘n Shine its breakfast time! Over the next while I hope to share, here and there, egg recipes and techniques. We eat eggs quite a bit on the farm. We have our own flock of hens and I love it. A pet that lays a beautifully packaged nutrient rich food. Definitely a win for me. Now let’s talk about a good hearty breakfast option, (or supper) Egg Hash for Breakfast Burritos: A Recipe from the Farm.
This easy recipe like alfredo sauce is a go to on those busy, “I don’t know what to make for supper nights!” I love how simple and filling these easy breakfast burritos are and I always enjoy them as well as the rest of the family. Really, they are good for any time of the day! There are a few different ways you can serve this, and we will touch on that as well as the recipe below. I hope you give it a try!
So, what is egg hash? Basically, crispy hash browns, scrambled eggs, southwest chipotle seasoning, cheese, optional sausage. This is fried up together, in cast iron pan, if you have it, then it is served wrapped in a flour tortilla (make sure to try these homemade ones, makes it even better!) with salsa, avocado and sour cream on top or the side. The Simple Egg Hash Ingredients:
Eggs
Farm fresh eggs if you have them and if not, any egg will do. You crack the eggs into a bowl and add the milk to make a scrambled egg mixture before putting them into the cast-iron pan or frying pan.
Tater Tots or Potatoes
Tater Tots or shredded potatoes work for this recipe. I like the convenience of the tater tots. Fun Fact: The Great Value brand Tater Tots are lower in sodium than the Ore-Ida brand.
Optional Sausage
We like this just as much with or without sausage but if you want to make it extra hearty just add some of your favorite breakfast sausage to the pan with the tater tots/potatoes. Sausage is a great way to add more protein to the dish.
Cheese
Another area you could experiment with. Our favorite to use is either a cheddar cheese, co-jack, or there is a three-cheese blend sold at Sam’s club we use.
Southwest Chipotle Seasoning
This seasoning adds just the right amount of flavor. We like the Mrs. Dash Southwest Chipotle Seasoning. I will link it below so you can see what kind it is.
Ideas of things to serve with or substitute for different flavors.
Choose based on your personal preferences! My favorite toppings are salsa, sour cream and avocado.
- Tortillas- Burrito size works best (Try my recipe for sourdough tortillas here. So soft and delicious!)

- Avocado
- Sour Cream
- Hot Sauce
Other possible burrito additions or substitutions:
- Sweet Potatoes
- Fried Hamburger
- A Breakfast Gravy
- Bell Peppers
- Onions
- Black Beans
- Feta
- Spinach
- Green Onion
- Turkey Sausage
- Pico De Gallo
Freezer Breakfast Burritos:
You could also make these as make-ahead breakfast burritos and freeze for busy mornings when you need a quick breakfast option before you head out the door. Just heat in microwave and they would be ready to eat. Double the batch of breakfast burritos for even more to put in the freezer or to eat some and freeze some for later!
Freeze them wrapped in aluminum foil or parchment paper in freezer bags, just make sure to REMOVE the tinfoil before putting them in the microwave to heat them up.

Egg Hash for Breakfast Burritos: A Recipe from the Farm
- 36 Tater Tots about a heaping 2 cups or 2 medium shredded and patted dry potatoes
- 3 T oil (your favorite cooking oil)
- 5-6 large eggs
- 3 T milk
- 4-6 sausage links or equivalent
- 1/2 teaspoon Mrs. Dash Southwest Chipotle Seasoning
- 1 cup shredded cheese, cheddar or co-jack
- First start with either defrosted tater tots or defrost them in the microwave on a microwave-safe plate, for 5 minutes.
- In a cast iron pan or frying pan heat the pan with the oil on medium heat. After about 5 minutes add the defrosted tater tots or the shredded potatoes, in a single layer, into the large skillet. Push down on the tater tots to make them flat. This allows more area to be fried and get golden brown.
- Fry on the first side for 5 minutes and then flip to the other side and fry for another 5 minutes in an even layer. Add in the sausage if using at this point.
- While the tater tots or shredded potatoes are frying crack the eggs into a medium bowl. Add the milk and whisk with a fork until well combined.
- Once the tater tots or shredded potatoes are done frying, they should be a nice golden brown, push them to one side of the pan.
- Add the egg mixture and let cook a little before, with a flat ended spoon, moving the egg mixture around until fully cooked to scramble the eggs. Add in the potatoes/sausage back into the rest of the pan with the egg mixture.
- Fry for a couple of minutes, adding in the seasoning and then sprinkle with cheese. Adding the seasoning at the end gives the best flavor. Turn off the heat and let sit until it has melty cheese on top and serve! Enjoy!
- Serve either in a warm tortilla or you can also just eat it as is with sourdough toast or English muffins.
