Unique Chocolate Covered Potato “Chip” Cookies

Have you ever had chocolate-covered potato chips? Basically, the best sweet and salty treat next to French fries dipped in Ice Cream. Chocolate covered potato chips are when you take the goodness of salty potato chips and dip them completely in sweet chocolate, milk or dark; you choose! They are pretty much best friends! Ha! This recipe for Unique Chocolate Covered Potato “Chip” Cookies adds them to a cookie base and oh these cookies are so good, the perfect combination! I love that this recipe has such simple ingredients that make such a unique cookie.
So, you take a favorite salty snack like potato chips, you cover them in another favorite snack, chocolate, and you put them in your favorite cookie base….so tasty! Fresh from the oven the cookie is tender, and the chocolate is still melty. I’m already a huge fan and I just created these this month!

The first thing you need are these: chocolate petals. A small business right here in North Dakota that makes hand dipped chocolates and one of her biggest sellers are chocolate covered potato chips or as she calls them Chocolate Petals. Her business is Morning Glory, and you can message her to order some Chocolate Petals to make these cookies. You could try and make your own too but really the Belgian chocolate she uses just makes her Chocolate Petals so good!

The Cookie:
A brown sugar butter cookie dough base is the perfect low-key buttery vehicle for the delicious, chopped chocolate covered potato chips. This is an easy recipe and a perfect one to make with your kids on a rainy day or a snowy day.
Some Tips to a Great Cookie:
- Always start with room temperature butter and eggs.
- Whip your butter until it is light and fluffy and as you add the sugar and egg make sure you whip it good again. When it is light and airy you have gotten to where you want to be.
- Don’t overmix once you have added the dry ingredients. Mix until just combined.
- Use a cookie scoop (linked below) to help you have consistent cookie sizing. They look good this way and bake up more consistently.

The Chocolate Petals (Chocolate Covered Potato Chips)
We talked about where you could get them above. Now let’s get them ready to add to the cookies.
I like larger pieces in the cookies that way you can’t miss them! I love that she uses the fat potato chips that have the ridges to catch the delicious chocolate. To make them ready to mix into the cookie dough I just take some of the chips and rough chop them with a chef’s knife.
Making the Cookies
- Preheat oven to 350 degrees.
- Rough chop the Chocolate Petals
- Whip the butter
- Add sugars and whip
- Add egg and whip
- Measure out dry ingredients
- Lightly mix the dry ingredients
- Stir in chopped petals with spatula
- Scoop
- Bake
- Enjoy!

The Unique Chocolate Covered Potato “Chip” Cookie Recipe
- 1 ¾ sticks butter, softened (14 Tablespoons)
- 1 cup brown sugar
- ½ cup white sugar
- 1 egg, room temperature
- 2 1/3 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 ½ cup chocolate covered potato chips, chopped (chocolate petals)
- Preheat your oven to 350 degrees.
- In a bowl of an electric stand mixer fitted with the paddle attachment or a large mixing bowl beat the softened butter on medium-high speed, until light and fluffy; about 2-3 minutes. Next, add the sugars and beat for another 2-3 minutes on medium speed. You can add the egg while the sugars are mixing.
- When you are done the batter should be light and fluffy. Next, measure out the dry ingredients either in a small bowl or put it into the bowl with the creamed mixture in this order, flour, baking soda and salt, then mix it up lightly with a spatula on top.
- Mix the flour mixture together with the creamed mixture on low speed until just combined. Then add the roughly chopped chocolate petals and mix just a little bit longer.
- Using a cookie scoop take and scoop 12 of the cookies onto a baking sheet. Then lightly flatten the dough balls with your hand. Bake in preheated oven for a baking time of 10-12 minutes until just turning golden brown and set.
- Cool on the cookie sheet for 5 minutes before transferring to a cooling rack. Once the cookies are mostly cool but still a little warm, remove from the wire rack and place in an airtight container. Cookies stay fresh for 2-3 days.
- Make sure to have a warm one with some milk so good!!
- You can freeze them in a freezer bag and take them out one at a time or as needed.
